HISTORY OF NATIONAL ASPARAGUS DAY

At present, California, Michigan, and Washington account for the majority of asparagus production in the United States. The national average asparagus yield in 2019 was approximately 4,076 pounds per acre, and total asparagus production was 84,39 million pounds.

From seed to harvest, asparagus can take up to three years, but the plants will generate spears for decades, making it an excellent crop. However, it is extremely labor-intensive, as each spear is hand-picked by farmworkers. They meticulously excavate each projectile to a depth of nine inches and trim its base. That is a tremendous amount of effort!
