3. After 60 minutes, check to see if the curd has formed a clean break. To do this, insert a clean knife into the side of the pot and then pull up on the blade. The curd should break cleanly away from the side of the pot. If it doesn’t, give it another 5-10 minutes before checking again.

4. Once a clean break has been achieved, cut the curd into 1-inch cubes using a long, sharp knife. Gently stir the curds with a spoon or spatula while cutting them so they don’
