National Lemon Cream Pie Day: A Historiography

Goodfellow is regarded by food historian Becky Diamond as “the mother of lemon meringue pie.” Outstanding among Goodfellow’s concoctions was lemon pudding, for which she received credit for developing a number of varieties that could be enjoyed unaccompanied or encased in a pastry shell to form a “pie.” In the early 1800s, lemons were considered a luxury item, yet they were easily obtainable in a bustling port city like Philadelphia.
