The History of Cake Day

The earliest known reference to cake day comes from the Roman emperor Nero’s wife Poppaea, who is said to have created the first cake day in order to honor her husband’s birthday. The tradition of cake day then spread to other parts of Europe, where it was celebrated on various dates depending on the country.

Cake day eventually made its way to America, where it was initially celebrated on George Washington’s birthday in February. However, after the advent of the International Date Line, cake day began to be celebrated on November 6th in order to maintain uniformity with the rest of the world. 1 cup (2 sticks) unsalted butter, at room temperature
2 cups granulated sugar
3 large eggs, at room temperature
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 cup buttermilk, at room temperature
1. Preheat oven to 350 degrees F. Grease and flour two 8-inch round cake pans. Set aside.
2. In the bowl of your electric mixer, beat the butter on medium speed until creamy. Add the sugar and beat until light and fluffy. Add the eggs one at a time, beating well after each addition. Add the vanilla extract and beat until combined.
3. In a separate bowl, whisk together the flour, baking powder, and baking soda. Gradually add this to the butter mixture, mixing until just combined after each addition. With the mixer on low speed, add the buttermilk and mix until everything is well combined.
4. Divide the batter evenly between the prepared pans and bake for about 30 minutes or until a tooth
