Since aeons ago, fishermen, their families, and the communities in which they reside have consumed prawns. Since ancient times, when Greeks and Romans enjoyed this shellfish tremendously, to the present day, when prawns is caught and shipped all over the world, this tiny crustacean has made a huge impact, particularly on coastal cultures.

Japan is currently the largest consumer of prawns per capita, followed by the United States. There are more than 2,000 species of prawns around the world, and they vary in size and colour. However, the most prevalent shrimp species are the Rock Shrimp, Pink Shrimp, Tiger Shrimp, and White Shrimp.

It is unknown precisely when prawns began appearing on the tables of American territories. Some historians assert that in the 1700s, French explorers in the Louisiana marshes encountered shrimp farming. By the middle of the eighteenth century, Mobile, Alabama had become a prominent location for seafood, including prawns, while Mississippi’s seafood industry did not become significant until the late nineteenth century. During this time period, the southern cuisine tradition of the prawn boil likely emerged.

In the late nineteenth century, it appears that some Italian settlers in California began prawn fishing in San Francisco Bay. Other states with access to the sea developed shrimp-catching and preparation techniques at different times. As improved methods for harvesting and transporting prawns became feasible in the early 1900s, the dish gained popularity across the nation.
