+ 2 chicken breasts, cut into bite-sized pieces

+ Salt and freshly ground black pepper to taste

+ Fresh cilantro leaves for garnish (optional) Instructions: Heat the oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes. Add the garlic, ginger, curry powder, turmeric, cumin, coriander, cinnamon and cayenne pepper (if using), and cook for 1 minute longer. Pour in the diced tomatoes with their juice and the coconut milk. Bring to a simmer and add the chicken pieces. Season with salt and black pepper to taste. Cook until the chicken is cooked through, about 10 minutes. Garnish with fresh cilantro leaves before serving, if desired.’
