Pisco Sour Day 2024 (US): In honor of the Pisco Sour, the national beverage of Peru, the first Saturday of February is observed as Pisco Sour Day. It occurs this year on February 3rd. This cocktail is so well-liked that it is a mainstay at numerous Peruvian celebrations and is available at nearly every bar and restaurant in the country. This beverage is called “Pisco” after the grape brandy of Peruvian origin, Pisco, and the cocktail term “sour” because of the sour citrus juice and additional sweeteners it contains. This beverage is not devoid of controversy, as the Chileans celebrate a special day in honor of the Pisco Sour and consider it their own.

Pisco Sour Day History

In the 16th century, Peru and Chile saw the establishment of vineyards, which made it easier to produce ‘aguardiente’—a strong alcoholic drink made from fermenting grapes. Peruvians ultimately adopted the name of the place from where this drink was exported: Pisco. Chile adopted the renaming convention and renamed their ‘aguardiente’ Pisco.

Despite strong scientific and historical disagreement, the Pisco Sour is widely credited to American bartender Victor Vaughen Morris, who helped popularize the drink worldwide. Morris oversaw celebrations for a Peruvian railway project while working there. Morris saw that the almost 5,000 visitors had finished all the whiskey by halfway through the party.

He accidentally mixed Pisco with a cocktail to create the Pisco Sour (version one). The official chronology of this historic event is also disputed. Morris founded his Lima restaurant in 1916, and “Hogar,” a Peruvian magazine, first referenced the Pisco Sour in September 1920. Although literature and marketing credit Morris with inventing the Pisco Sour, Chileans believe English steward Elliot Stubb did so in 1872.

Regardless, this beverage revolutionized in the early 1900s. In 1924, Morris’ trainee bartender Mario Bruiget added egg whites and Angostura bitters to the classic cocktail. Pisco Sour, from Chile, became famous in 1927. Morris’ bartenders gave the Pisco Sour recipe to their bosses after the tavern closed in 1929, spreading the drink throughout Peru. California introduced this drink in the 1930s, followed by New York 30 years later.

Pisco Sours are unique to Peru and Chile, and people have their favorite varieties.
