Maize Day 2023: This year, National Maize Day falls on November 26, the day following Thanksgiving. Considering its abundance of vitamins, fiber, and antioxidants, this yellow bounty from the earth is considerably more valuable. A designated day is carved out annually to commemorate the immense benefits of maize. The holiday, which Corrine Lightweaver initiated, has proven to be advantageous for us to observe. Did you know that maize comes in hues other than yellow? Additionally, uncommon hues include black, white, pink, red, and blue. Certain species have spots, stripes, or are variegated.

The Origins of Maize Day

Thanksgiving Day was inadvertently inaugurated in 2004 when artist Corinne Lightweaver and her family conducted a modest research experiment to observe the holiday from the perspective of the indigenous people.

Maize, scientifically known as Zea mays, originated in southern Mexico around 1500 B.C. The renowned commodity known as maize was ultimately developed from a wild grass called ‘teosinte’ that was domesticated by early Mexican farmers through the selection of the largest and finest kernels. Domesticated maize rapidly spread across Mexico due to its nutrient-dense nature, portability, storage, preparation, and consumption simplicity. It traversed the northern region before arriving among the Native Americans after traveling along the coast to Peru and beyond. Today, maize is a significant component of our diet and a global commodity. An annual output of 297,624,053.95 imperial tons is limited to the United States.

Producing more than rice or wheat, maize has become a staple diet in many regions of the globe. Maize is utilized not only for human consumption but also as animal nutrition and in the production of cornstarch and corn syrup. As kernels, sweet corn varieties, which are rich in sugar, are cultivated for human consumption. In contrast, field varieties are predominantly utilized as animal feed and maize-based human food.

Sweet corn, which can attain a maximum height of eight feet and a minimum height of 23 feet, is typically the lesser variety. Vitamin C, which is abundant in maize, is an antioxidant that prevents cancer and cardiovascular disease and safeguards cells against injury. Carbohydrate-dense yellow corn contains lutein and zeaxanthin, which protect the lens from injury that leads to cataracts; therefore, it is beneficial for the eyes. Sweet corn, dent corn, pod corn, flour corn, flint corn, and popcorn are the six varieties of maize or corn.
