The word “gingerbread” comes from the Old French word “gingerbras,” which was borrowed from the Latin word “zingebar” for ginger.

The gingerbread spice that gives it its distinctive heat has its roots in China, where it has long been employed in traditional medicine. Through the Silk Road, it reached Europe. The first Crusaders took some of this spice back from the Middle East with them to try. It was also used in medical preparations and preserved meats.

Queen Elizabeth I is credited with popularising this design motif by having biscuits made in it. Fairs in England eventually became known as Gingerbread Fairs, and the ginger cookies sold there were dubbed “fairings.” The forms would shift from flowers in the spring to birds in the autumn.

Queen Elizabeth I is also credited with creating the first gingerbread man, which she purportedly used to welcome dignitaries to her court.

German settlers introduced gingerbread to the Americas, popularised by the Grimm Brothers’ “Hansel and Gretel” narrative. The German cities of Nuremberg, Ulm, and Pulsnitz; the Polish city of Torun; the Russian city of Tula; the Hungarian cities of Pest and Prague; the Czech cities of Pardubice and Prague; and the French city of Lyon all recognise gingerbread as an art form. Since the Middle Ages, these communities have benefited from baking guilds recognised by the state.
