What is required to prepare Jigarthanda at home:

  • Two glasses of Milk
  • Four tablespoons of condensed milk (you may add more or less to suit your flavour).
  • Four teaspoonful of rose- or nannari-based syrup
  • Two scoops of vanilla ice cream (other varieties are acceptable, but may alter the flavour)
  • Two teaspoonful of the badam pisin spice
  • Two glasses of water are required to soak the badam pisin.

Homemade Jigarthanda preparation:

Start by cleaning and soaking the badam pisin pieces overnight in two glasses of water. Additionally, you can submerge it for eight hours in the morning. After eight hours, the badam pisin will have the consistency of gelatin. Remove any remaining liquid and set these aside. Now, combine four tablespoons of condensed milk and two cups of cooled milk in a mixing basin. After thoroughly combining condensed milk and chilled milk with a whisk, refrigerate the mixture.

Take a glass and place the moistened badam pisin inside. If it’s a small quantity, you can add the entire batch that has been soaking. If you have more than ten portions, you should freeze them and use them for other purposes. Then, add two tablespoons of rose or nannari syrup to the glass. Pour the mixture of condensed milk and milk into the glass at this time. Then, a serving of vanilla or any other flavour ice cream is added. Pour a small amount of nannari or rose nectar over the ice cream to finish the homemade Jigarthanda. If you prefer chewing on something crunchy in your beverage, you can add dried fruits and nuts.

And, as stated previously, this is not how Jigarthanda is actually prepared in Madurai. Original Jigarthanda will be prepared with reduced milk and without condensed milk. Instead of milk, condensed milk is used in the reduction process. If you have the time and the ability to create authentic Jigarthanda at home, you can search for additional recipes and test them.

In certain regions, the authentic Jigarthanda also contains rose petals. This ingredient is not utilised by everyone, but it imparts a distinct character to the delicious beverage.

In place of rose syrup or nannari syrup, roohafza may be used in this Jigarthanda dish. The quantity of ingredients specified above is only sufficient for two individuals. If additional servings are desired, merely increase the quantities accordingly. You may substitute almond or any other plant-based milk for whole milk if you are vegan. You may also substitute vegan ice cream, rabri, or basundi for the condensed milk.

This is one of the easiest and tastiest methods for making Jigarthanda at home.
