Before adding the tomatoes, cook the prepared Chettinad masala paste for an additional 5 minutes with a little water to prevent scorching. After three minutes of cooking, add water to the mixture so that it can simmer for an additional fifteen minutes. Add some coconut milk, bring it to a simmer, and then add some lime juice to enhance the flavour of the dish. After adding the eggs, serve with rice or roti.
